i literally loved making this video and i hope you love watching it just as much!! come along for a day of simple, delicious and extremely cozy fall meals - there are no food rules here, just plenty of tasty eats! // recipes // SPICED VANILLA STOVETOP OATS W/ CINNAMON APPLES (serves 2) 1 cup rolled oats 1 tsp cinnamon 1 tsp pumpkin pie spice 1/2 tsp vanilla extract 2 Tbsp maple syrup Pinch of salt 2 cups oat milk 1/2 Tbsp butter or coconut oil 2 apples, roughly chopped 1 Tbsp maple syrup a good shake of cinnamon idk Chopped pecans Combine oats, cinnamon, pumpkin pie spice, vanilla, maple syrup, salt and oat milk in a medium saucepan. Cook, stirring occasionally, over medium heat until thickened, about 10 minutes. Meanwhile, melt butter or coconut oil in a medium frying pan over medium-high heat. Add apples and cook, stirring frequently, until softened, about 5 minutes. Add maple syrup, cinnamon and a pinch of salt and continue cooking until caramelized. Divide between two bowls and serve topped with chopped pecans. CLASSIC TOMATO SOUP https://www.feelinwhisky.com/classic-... CHICKEN + CHICKPEA COCONUT CURRY 1lb boneless chicken breasts or thighs, diced 1 cup plain yogurt 1 Tbsp garam masala 1 tsp turmeric, divided 1 tsp cumin, divided 1/4 tsp cayenne pepper (or more to taste) 1 Tbsp ginger paste or freshly grated ginger 4 cloves garlic, minced and divided Juice of 1 lemon, divided 1 Tbsp neutral oil 1/2 yellow onion, finely diced 1 tsp coriander 1 (6-ounce) can tomato paste 1 (14-ounce) can full-fat coconut milk 1 (15-ounce) can chickpeas, rinsed and drained (or more chicken) Steamed broccoli and rice + chopped cilantro, for serving In a small bowl, stir together yogurt, garam masala, 1/2 tsp turmeric, 1/2 tsp cumin, cayenne pepper, ginger, 2 cloves garlic, and the juice of 1/2 lemon. Pour over chicken and marinate for at least 30 minutes or up to 2 hours. Add chicken, shaking off the excess marinade, and fry in batches until golden-brown. Discard remaining marinade. Remove chicken to a plate, cover with foil, and set aside. Wipe out the skillet and heat oil until shimmering. Add onion and saute for 5 minutes or until beginning to soften, adding a splash of water to deglaze the pan as necessary. Add remaining garlic, coriander, 1/2 tsp turmeric, 1/2 tsp cumin, and tomato paste, and cook for an additional minute, or until fragrant. Add coconut milk and stir to combine before adding chicken and chickpeas into the sauce. Cover and simmer for 15 minutes.
