This is the perfect gluten-free bread recipe for beginners and experienced bakers alike. Recipe: (1 loaf) Psyllium Gel: 360g warm water 20g whole psyllium husks 15g avocado oil 8g Apple Cider Vinegar Dry Ingredients: 145g Tapioca Flour 145g White Rice Flour 50g Sorghum Flour 15g Sugar 8g Sea Salt 6g Yeast (I used active - even though I didn't activate it :)) Steps: 1. Weigh out all ingredients for the psyllium gel (psyllium husks, water, avocado oil, acv) Stir all ingredients together and set aside to let the gel form. 2. Weigh out all of your dry ingredients in either a regular bowl if doing by hand or in your stand mixer bowl (tapioca flour, white rice flour, sorghum flour, sugar, salt, yeast) Whisk all ingredients together 3. Add the gel to your dry ingredients and "cut" together with a spoon. 4. If using stand mixer, add yoru dough hook attachment and let it do the work. If using your hands (like I did) squish it between your fingers and keep kneading together until a ball of dough forms. 5. Take your ball of dough and flatten into an oval disk on your counter -- slightly roll out. fold length wise and "pinch" the seam together. 6. Let rise for 45 min on a cooking sheet lined with parchment paper covered lightly with cling wrap. I place in my oven on the warm setting. 7. Pre-heat your oven to 425 Degrees F. 8. When ready to bake, take the cling wrap off and cut a few slits in your dough -- spread either oil over the dough or a whisked egg white. 9. Place in the oven with another cooking sheet that has ice in it (for steam). Bake for 15 min then REMOVE just the now melted ice tray and let your oven de-steam for a second. Continue to bake for 30-35min. 10.
