Easy weeknight dinner, vegetarian enchilada casserole! ingredients: 12 Taco size corn tortillas 12 oz enchilada sauce 1 can corn 1 can black beans 1 green bell pepper, diced 1/2 onion, diced 5 cups chopped spinach 2 tsp cumin red pepper flakes to taste 2 cups Mexican cheese mix 1 cup shredded cheddar 1 tbsp olive oil Heat oven to 400 saute onions, bell pepper, and spinach in olive oil with spices until softened let cool slightly, mix with beans, corn, and cheese cover 9x13 baking dish with a thin layer of sauce lay down a layer of tortillas pour in half the filling mix cover with 1/3 of the enchilada sauce add another layer of tortillas, the rest of the filling, and half of the remaining sauce add 1 more layer of tortillas, the rest of the sauce, and the shredded cheddar bake at 400 for 25 minutes let cool slightly before serving #cookwithme #food #cooking #cookingvideo #dinner #dinnerideas #recipe #easyrecipe #easymeals
