Ham bone vegetable soup is delicious! This southern style soup's base is made by boiling a ham bone to make ham stock, then adding a large can of crushed tomatoes (or other canned tomato product). After making the base, all you have to do is add vegetables (frozen lima beans and frozen mixed vegetables makes this step easy), a potato or two, and leftover Easter ham. Onion soup mix--my secret ingredient in many recipes--and spices finish off the soup. This vegetable soup is colorful, delicious, and easy, so it's the perfect way to use up leftover Easter ham. After removing as much meat as I could, I boiled it with carrot, onion, garlic, celery, and bay leaf. When the stock was done, I poured 1 28 oz can of crushed tomatoes into a pot and added an equal amount of stock. I added some garlic and onion before turning on the heat to simmer. Once the garlic and onions had lost some of their bite, I started adding the vegetables: a potato, 1 bag of frozen mixed vegetables, and 1 bag of frozen lima beans. I then added a pound of leftover ham meat: some of it was frozen, some of it came off the bone after boiling. Although the stock, vegetables, and smoked ham made the soup very flavorful, I added some spices and onion soup mix to really put the ham bone vegetable soup over the top.
