INGREDIENTS; 1. For chicken marination: 750 gram chicken with bones 125 gram plain unsweetened yogurt 3 tbsp ginger garlic paste 1/3 nos. lime juice 1 tsp salt 1/2 tsp tumeric powder 1 tsp chilli powder To the cleaned curry cut chicken pieces with bones, add all the ingredients listed above. Mix well and set it aside. Cover with cling wrap and put it in the refrigerator until the rest of the preparations are done. ...... 2. For homemade biryani masala: 1 tbsp coriander seeds 1/2 tbsp fennel seeds 1 nos. cinnamon stick (1") 1/2 tsp black pepper seeds 3 nos. cardamon pods 4 nos. cloves 2 nos. mace flower 2 nos. dry bay leaves 1 nos. black cardamon 1 nos. star anise 3 nos. dry red chillies 1/2 tsp cumin seeds To a pot, all the ingredients listed above for making biryani masala, except cumin seeds. On low heat, dry roast it 3-5 mins. Once done, the coriander seeds will be crunch and pop when pressed in between your fingers. Add cumin seeds. Mix and turn off the heat. Once coooled, grind it to a fine powder. ...... 3. For frying: 1/2 cup cooking oil 4 nos. onion ( medium) 1/4 cup golden raisins Finely slice onion. To cooking pot, add cooking oil. Once oil is hot on medium heat, add sliced onion. Fry onions 3-5 mins on medium to high heat while stirring frequently. Then on low- medium heat until pieces are light golden browned. Stir occasionally. Once starts to change colour, do keep a close watch and stir frequently as it will burn quickly at this stage. Once done, remove to a paper towel and spread it. Seperate it with your fingers as well. It will turn crispy as it cools down. To the same pot, add golden raisins and fry 1-2 mins on low-medium heat. Remove to a paper towel and set it aside. ....... 4. For cooking chicken gravy: 1 nos. onions (medium) 16 nos. curry leaves Marianted chicken from step 1. 4 nos. fresh green chillies 1 nos. fresh tomato (diced) 5 nos. mint leaves 4 stalks coriander leaves. Homemade biryani masala in step 2. 1 tsp salt 1/2 cup water 2 stalks coriander 1/3 of fried onions To the same oil used for frying onions and raisins, add sliced onion. On medium heat, fry until translucent. Add curry leaves and mix it. Add marinated chicken pieces form step 1. Mix 3-5 mins on medium - high heat. To a blender, add fresh green chillies, tomato, mint and leaves. Grind it and add it to the chicken gravy. Can also add it whole or diced as well. Mix it 1-2 mins on medium heat Add homemade biryani masala. Stir untill well combined. Add salt to taste and mix it. Lid on cook 6-8 mins on low-medium heat. Do stir occasionally to avoid burning the gravy at the bottom. Lid off. Stir and add water. Add coriander leaves broken into small pieces in between your fingers. Mix for 1-2 mins. Add 1/3 of the fried onions and mix it for 1-2 mins. It is done. Set it aside. ...... 5. For cooking rice: 2 cups long grained basmati rice. 7 cups water 2 1/2 tsp salt 3 tbsp cooking oil 2 nos. dried bay leaves 3 nos. cloves 1 nos. cinnamon stick (2") 1/2 nos. lime juice Wash and soak basmati rice for 20-30 mins To a pot add water, salt, cooking oil, bay leaves, cloves, cinnamon stick and lime juice. Bring it to a boil. Add washed and soaked rice. Let it cook for 80%. It will get cooked further in the pot in-between layers of chicken gravy. Remove it to a strainer and set it aside. ..... 6. Layering 1 tsp cooking oil 2 tsp ghee Cooked chicken curry gravy Cooked rice Fried onions Fried golden raisins Coriander leaves 2 tsp Red/ orange food colouring (optional) 1 tbsp rose water To a deep and thick bottomed pot, add cooking oil and ghee. Add half of the cooked chicken curry gravy in step 4. Add 1/2 of the cooked rice layer. Add 1/2 of the remaining fried onions, golden raisin and coriander leaves. Add 1 tsp ghee and tsp food colouring. Repeat the layering process. Put the rest of the chicken curry gravy, followed by rice layer, fried onions, fried raisins, coriander leaves and food colouring. Add rose water / pandan leaf water. Cover with foi and put the lid on. Heat a tawa on low heat. place the layered chicken biryani pot on top of the tawa and cook it 20-30 mins.
