
peanut butter cookies
INGREDIENTS (for ~26 cookies) 1 1/4 cups (160g) all-purpose flour 2 1/2 tsp baking powder Pinch of salt 1/2 cup (115g) unsalted butter (room temperature) 1/2 cup (100g) brown sugar 1/4 cup (50g) white sugar 1 large egg (room temperature) 3/4 cup (190g) creamy peanut butter 1 tsp vanilla extract Chocolate heart candies INSTRUCTIONS 1. Whisk together flour, baking powder, and salt. 2. Beat the butter for 1 minute until creamy. Add the brown and white sugar, beating until creamed and smooth. Beat in the egg until fully incorporated. Mix in the peanut butter and vanilla extract until combined. 3. Gradually add the dry ingredients, beating on low speed until just combined. Cover the dough and refrigerate for at least 1 hour. 4. Scoop cookie dough onto a parchment-lined baking sheet, spacing them about 3 inches apart. Bake at 350°F (175°C) for 11–13 minutes. 5. Remove the cookies from the oven and let cool for 5 minutes. 6. Gently press a chocolate heart into the center of each cookie. Use a thin spatula to transfer the cookies to a plate or several smaller plates, then place them in the freezer for 10 minutes to set the chocolate. 7. Remove from the freezer and serve.
