Red beans & Rice š«š Hands down one of the top 3 dishes whenever Iām in New Orleans! The perfect comfort food for this chilly weather coming up! Full Ingredient list: 1-1.5 lb red beans 2 smoked turkey legs 1 lb andouille sausage sliced 6-8 cups chicken broth 1 medium onion diced 1 small green bell pepper diced 3 celery stalks diced 4 garlic cloves minced 2 bay leaves 1-2 tbsp cajun seasoning 1-2 tbsp black pepper 2-3 tsp smoked paprika Green onion to garnish Corn bread to garnish Recipe instructions: Allow red beans to soak for 8-12 hours. Allow smoked turkey to simmer for 2-3 hours or until tender. Take turkey out, add in beans + seasoning. Cover in chicken broth and simmer for 2-3 hours minimum. Add more chicken broth if beans begin to soak up too much liquid. Mash some of the beans towards the end of the cooking process to thicken the beans. Add in proteins and simmer for 30 min- hour.
