Easy & Authentic Paya Curry | Beef Trotters | Beef Paya | Neelo's Kitchen Paya is a traditional Pakistani breakfast dish. It is made using trotters and served with naan. If done correctly, paya can make for one of the most finger licking and satisfying dishes imaginable! Traditional paya cooking is a long and slow process, letting the meat cook through; fall off the bone and almost melt in your mouth. Enhancing the flavours further is the gelatinous fat, juicy bones and marrow melting through to form the base for a delicious stock giving a distinct taste and rich meaty gravy to the dish. If it’s cooked with the skin, make sure to roast the trotters over a fire to burn off any loose hair (of course do be careful whilst doing this!). If you prefer you can ask your butcher to take the skin off and leave the little meat on with the bone. Use flour to remove hair from paya too. As Paya don't have enough meat, I have used bong meat too, to fulfil meaty desire :-) Ingredients: Beef trotter 1 cleaned, washed and roasted on the stove bong meat 500g to 700g ( optional) Whole garam masala ( cinnamon stick 1, 4 cloves, 8 black peppercorns, 1 black & 2 green cardamoms, 1 Anistar, 2 bay leaves ) 1 onion 1 tbsp whole coriander seeds 1 tbsp fennel seeds ( saunf) 1 tsp cumin seeds ginger & garlic whole 1/2 tsp turmeric 1 tbsp salt 6 glass water For curry 1 big onion slice 2 tbsp yogurt salt to taste 2 tsp red chilli powder 1 tsp kashmiri red chilli powder 1 tbsp coriander powder 1/2 tsp fennel seed powder 1 tbsp ginger & garlic paste Nutmeg & mace powder 1/4 tsp 1/2 tsp garam masala powder whole garam masala1 tsp turmeric 1/2 tsp
