
EASY MEAL PREP YOUR FAMILY WILL LOVE! Breakfast, Lunch, Dinner & Snacks! Ingredient Prep
Well, I thought it was time to get my life sorted again. I have really just been ‘winging’ it from meal to meal the last couple of weeks and it really results in more time and energy being wasted in the kitchen. With 3 little kids it is very difficult to stay on top of things, but I know for a fact that when I plan a little and get some things sorted ahead of time, it makes the week go so much smoother. In today’s video, I will prepped 2 dinners for those evenings that there really is no time or for when I simply do not have the energy to cook and some snacks for the kids – because they are always SO HUNGRY when they come home from school. I also just made a little breakfast for myself as well as got some of the veggies ready so that it is easy to add those as a side dish to whatever we are eating. If you are interested, here are the recipes: BEEF STEW 500g diced beef 5 carrots ½ a big butternut squash or a whole small one 1 Large or 2 Medium Sweet Potatoes - Diced Seasonings: Beef Casserole Mix, Splash of Worcestershire Sauce, Salt, Pepper, Chilli & Garlic Salt and Mixed Herbs. Approximately a teaspoon of each, but I just do it on feel. CHICKEN TERIYAKI 4 Chicken Breast Fillets – diced into bitesize pieces 1/3 Cup Soy Sauce 1/3 Cup Brown Sugar 3 Garlic Cloves – Crushed ½ Teaspoon Grated Ginger I marinated the chicken in this mix and poured the chicken and the mix into a pan. I added a splash of water and then reduced it down. Once the chicken was fully cooked, I added a tablespoon of Corn starch to the mix to thicken the sauce. Serve with Rice and Broccoli (and Corn on this day) and sprinkle some Sesame seeds over the chicken. All the kids LOVED this one. ENERGY BALLS 1 Cup Raw Oats ¼ Cup Peanut Butter (I used all natural peanut butter) ¼ Cup Golden Syrup 1 Tablespoon Nutella (I’ve substituted Biscoff Spread as well) ¼ Cup Smarties Mix and form onto balls and refrigerate. These can be frozen, but I’ve never had to do this because the kids go through them so quickly. OVERNIGHT OATS This is my ‘Carrot Cake’ Overnight oats and I LOVE IT! So filling and it is a BIG Portion for 260 calories OR 360 if you add apple. I always use equal quantities oats, milk and yoghurt and find that 1/3 cup is sufficient So the recipe I have created is: 1/3 Cup Raw Oats 1/3 Cup Fat Free Greek Yoghurt 1/3 Cup Skimmed Milk Teaspoon of Peanut Butter (almond butter is also really good) Teaspoon Ground Cinnamon Tablespoon Skinny Syrup – My favourite is the Caramel Peacan 1 Grated Carrot 2 Teaspoons Chia Seeds Mix everything together and put in the fridge overnight. When I’m ready to eat it I add a finely chopped apple, add a little more cinnamon (because IT’S LIFE) and some coconut sugar. VEGGIES *I started with making some stir fry mixes. I added some red onion, peppers, courgette, red cabbage and ribbons of carrots, but you can use whatever you like. It actually stays very fresh in the mason jars, so definitely worth investing in those. I will then eat this as a side dish for dinner or lunch or just make some ramen noodles and mix this through once briefly stirfried for a quick, hassle free and healthy-ish lunch. *I mixed Courgette, Red Onion, Peppers and Cherry / Plum tomatoes. When I’m ready to serve it I will add some mixed herbs, chilli flakes, salt & pepper and of course drizzle with some oil and then roast it at 180C for 30 to 40 minutes. This is a lovely Mediterranean Veggie Side Dish *I also chopped up some butternut and carrots. I always mix these two and add some finely cubed sweet potato (which I didn’t prep because it turns black). I will put this on a roasting dish and either just add salt OR add a little salt and then brown sugar / golden syrup and cinnamon OR add some salt, pepper, mixed herbs and chilli flakes and roast it at 180C for 30 to 40 minutes for a lovely side dish. So versatile and it tastes amazing.
