Recipe for Reverse-Seared Steak BELOW This is what inspired me to buy a Traeger smoker. Great steak within an hour. I’ll never cook steak another way again. The sear can produce a lot of smoke, so ideally use an outdoor stove. Season steaks with ample salt and pepper then place on lower rack and close lid. Cook meat to an internal temperature of 105 F for rare, 110 F for “rare side of medium rare” (my favorite), 115 F for medium rare, 125 F for medium, or 135 F for medium well. Check after 20 minutes. Heat cast iron skillet to medium-high. Add oil and heat until just starting to smoke. Carefully sear smoked steak for two minutes on each side, or until brown, crusty, and caramelized. Let sit for 10 minutes under the foil, then serve. *I use my Traeger regularly because I’ve found recipes that take less time to cook, such as burgers, chicken breasts, sausages, and this incredible reverse-seared steak. The Pro Series 22, The smaller size fits well on your deck or patio. Quickly enjoy short-term smokes (burgers, hot dogs, chicken breasts, meatloaf, and many more). My favorite is the reverse seared steak - ribeye or sirloin smoked in under an hour, then seared on a cast iron skillet in clarified butter or oil for two minutes per side ( it’s the best steak I’ve ever made). This model is affordable because it’s smaller and doesn’t have wireless temperature features which is no problem, you can buy wireless sensors and thermometers online that work very well. The cooking range is 180 to 375 degrees - ample for smoking. Its cooking area of 572 square inches has been ample for my smoking needs, sometimes serving several people. When you purchase, be sure to get a good cover as the control panel and electrical instrumentation should not remain exposed to outside weather. The pellets are heated using electricity, so you’ll need to place this near an outlet. My smoker is 50 feet away from my house, but no worries because I use a 50-foot, high-gage, appliance extension cord. I recommend buying drip pot liners. Get good quality aluminum foil to cover your drip pan, or buy drip pan covers online. The Traeger is a marvelous invention.
