Hyderabadi style Biryani Ingredients Mutton - 800 gm Basmati Rice gm735 Onion - 2 Tomato - 3 Coriander - big bunch Mint leaves - big bunch Green chilli - 3,4 Big cardomom - 4 Small cardomom - 4 Laung-4 Cinnamon - 2 Shahi zeera-4 spoons Garam masala - 2 spoons Chat masala-2 spoons Coriander powder - 2 tsp Roasted cumin powder - 2 tsp Turmeric - 3 tsp Red chilli powder - 3 tsp Salt-to taste Ginger garlic paste - 2 tbsp Milk - 1/2 cup Colour - green, yellow Delicious mutton Biryani Instructions: Cook Mutton: In a pressure cooker, heat oil, add 1 sliced onion, and fry for 2 minutes. Add ginger-garlic paste and mutton, frying until browned. Season with turmeric and salt, add water, and cook for 2-3 whistles. Simmer for 15 minutes until tender. Prepare Masala: In a pan, heat oil, add 1 onion, chopped finely and add half the whole spices, and 1 tsp ginger-garlic paste. Fry, then add chopped tomatoes, coriander, cumin, chaat masala, and salt. Cook for 10 minutes. Combine: Add tender mutton and its liquid to the masala, frying for 15 minutes. Cook Rice: Boil water with remaining spices, gg paste and salt, add soaked rice, and cook until 70% done. Drain.
