VEGAN & GLUTEN FREE • SUPER MOIST CHOCOLATE PUMPKIN BREAD 🍫 One Bowl + a few simple ingredients you already had to get for Thanksgiving 🧡 INGREDIENTS: 3/4 cup pumpkin purée 1 cup oat or almond milk 1/2 cup melted vegan butter 3/4 cup maple syrup 1/3 cup cocoa powder 1 1/2 tsp baking powder 1 tsp baking soda 1 tsp vanilla 1 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp cloves 1/4 tsp salt 2 cups regular or gluten free all purpose flour 1/2 cup vegan chocolate chips INSTRUCTIONS: Preheat the oven to 375. In one bowl, mix the pumpkin purée, oat milk, melted vegan butter, maple syrup, cocoa powder, vanilla, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt together. Then, add the flour & mix until smooth. Fold in the vegan chocolate chips. Transfer the batter into a greased metal loaf pan. Bake for 35-40 minutes in the oven or until the bread has completely risen. Be careful not to over-bake :) Allow it to rest and cool before slicing and serving!
