
Turkey Soup - Traditional Newfoundland - Bonita's Kitchen
Welcome to Bonita's Kitchen! Today we will be making Turkey Soup, made with leftover turkey and fresh vegetables. See recipe below! Our website link: https://www.bonitaskitchen.com Link to Cookbooks link: https://www.bonitaskitchen.com/cookbook Ingredients: 12 cups water or stock 2 cups chopped turkey or boil down 2 turkey legs, left over turkey bones until all turkey have removed from bones, keep stock for soup. 2 medium onions 6 sticks of celery 3 cubes of garlic 1 tbsp ginger 1 tsp pepper 1 tbsp sea salt ( or 1 cup chopped salt beef ) 2 cubes of chicken stock (optional) 1 cup chopped carrots ¼ cup chopped turnips 1 Small Parsnip 1 cup chopped potatoes ( white or red ) ½ cup of your choice of noodle or rice ½ Tsp Savoury Method: 1 - In large boiler add 12 cups of water or stock, 2 cups turkey or what you would like, start the boil on your turkey bones until all turkey meat have removed from the bones, this could take 30 minutes to one hour depending on the amount, remove all bones from pot. 2 - Then add 2 cups chopped onions, 6 celery sticks chopped, 3 cubes of garlic chopped (optional) ,1 tbsp fresh ginger chopped or grated, (sea salt) optional and pepper , 2 cubes of chicken stock. 3 - Bring everything to a boil then add all your vegetables continue cooking for 1 hour then last 10 minutes add your noodles or rice, your choice. 4 - Turn your heat down on low then let soup simmer until you are ready to serve, or remove from heat. 5 - You can add fresh herbs or savoury to your soup then stir it in. Prep time is ½ hour and cooking time is another 1 hour. Great Tips: Bottle your soup it will keep in your fridge for 7 days, this recipe will make 12 one cup bottles. You must bottle while your soup is hot, pour hot soup in your bottles seal on caps let set on counter until room temperature then store in fridge or cool storage. If you like to freeze soup , after your soup have cooked let pot of soup cool to room temperature then scoop up in freezer containers , date each container store in freezer.
