
Lemon Pound Cake
This lemon pound cake is moist and flavorful, with a perfect balance of sweetness and citrus taste, making it a wonderful refreshing treat for any occasion. Ingredients -300g all-purpose flour -250g light brown sugar -4 eggs (room temp) -225g salted butter (room temp) -Zest from 1 whole lemon -3 tablespoons fresh lemon juice(Juice from about 1 lemon) -120ml milk (room temp) Icing Glaze -120g icing sugar -1 tablespoon fresh lemon juice -2 teaspoons milk Instructions 1. Preheat oven to 165C. Grease a loaf pan and set aside. 2. In a bowl, whisk together flour and baking powder. 3. In a large bowl, cream softened butter and sugar until light and fluffy. Add in lemon juice and lemon zest. Then add eggs one at a time, beating until well combined before adding the next one. 4. Mix half of the flour into the batter. Then fold in milk and remaining flour until combined. 5. Pour the batter to the pan. Bake for 70-75 mins, or until a toothpick comes out clean when inserted in the centre of the cake. Let the cake cool on a wired rack. 6. Icing - in a bowl, whisk together icing sugar, lemon juice and milk. Drizzle over the chilled pound cake. Enjoy!
