I have given Rabdi recipe along with Chasni; so you should be able to make this easily. Enjoy the festival celebrations and please be careful while making this at home. Ingredients : 1/2 cup desi ghee 6-7 ice cubes 1 cup plain flour (maida) 3-4 cup of chilled water 1 lemon juice Oil (for frying) 1 cup + 2 tbs sugar Water (as required for Chashani) 3-4 crushed cardamom 700 ml milk To garnish, chopped almonds, pistachios, dry rose petals & gold leaves (optional) Method : Take a mixing bowl Add 1/2 cup desi ghee Add 6-7 ice cubes Mix it and beat well with hands until it turns creamier (remove excess ice cubes) Add 1 cup plain flour (maida) Add 3-4 cup of chilled water gradually Mix it well with hand whisker Add 1 lemon juice in the end Mix it to make smooth flowing consistency Keep ice slab in another and keep this bowl of batter on it Heat up a pan with deep base Pour oil and boil on high heat Pour spoonful of batter keeping a good distance from hot oil Batter will splatter and the froth subsides slowly (make a hole in the centre) Repeat the process 8-10 times Fry this on high heat until it turns golden-brown Release the sides with knife first Pull the ghevar out once cooked Drain off the oil completely (make more Ghevar with same procedure) To Make Chashani :- Heat up the pan, add 1 cup sugar Add water (do not take more water) Add crushed cardamom Cook until sugar syrup gets one string To Make Rabdi :- Heat up another pan Pour approx 700 ml milk Boil it on high heat until it turns thicker Keep stirring to avoid sticking at the base Add 2 cardamom (elaichi) powder Add 2 tbs sugar and mix it well Let it boil and stir continuously to get thicker consistency Turn off the heat and let it cool down Now to serve Ghevar in two ways, Take Ghevar on serving plates Pour Rabdi on one Ghevar Garnish with some chopped almonds & pistachios Add some kesar threads mixed with milk Add some dry rose petals & gold leaves (optional) Take another Ghevar on a plate Pour Chashani on it Garnish with some chopped almonds & pistachios Add some dry rose petals & gold leaves (optional) Enjoy your Delicious Festive Treat Ghevar!!!
