Chocolate Chip Cookies Bars Ingredients: 1/2 cup (115g) unsalted butter, melted and cooled (the original recipe calls for 115g, but I added an extra 30g of butter because it wasnt soft ) 2 tablespoons coconut oil (if unavailable, increase the amount of butter) 1/2 cup (100g) brown sugar 1/3 cup (67g) granulated sugar 1 large egg, at room temperature 1 teaspoon vanilla extract 1 1/4 cups (185g) flour 1/2 teaspoon baking soda 1 1/2 cups chocolate chips Instructions: 1. Preheat the oven to 350°F (175°C). 2. In a saucepan, melt the butter over medium heat. Once it starts to boil, swirl the pan or stir constantly until the butter turns a deep amber color (brown butter). 3. In a bowl, mix the flour and baking soda. Set aside. 4. In a separate bowl, combine the cooled brown butter, oil, brown sugar, and granulated sugar. Whisk for 1-2 minutes until smooth. 5. Add the egg and vanilla, and mix (2-3 minutes). 6. Gently fold the dry ingredients into the wet mixture. 7. Add the chocolate chips and mix with a spatula. Be careful not to overmix. 8. Line a baking tray with parchment paper. 9. Spread the mixture evenly on the prepared baking tray. 10. Bake for about 25 minutes, or until the top turns slightly golden (check after 20 minutes, and be careful not to overbake). 11. Remove from the oven and allow to cool completely before slicing and serving.
