Chicken Club Sandwich (Makes 3 sandwiches) Ingredients: 9 slices of bread 1 onion, sliced into circles 1 large cucumber, thinly sliced 8-9 lettuce leaves 1/2 cup roasted red peppers 3-4 Cheddar cheese slices 2 large tomatoes, thinly sliced For the chicken: 1 lb boneless chicken thighs Salt and pepper to taste 1 tsp red chili flakes 1 tsp Cajun seasoning 1 tsp garlic powder Oil for cooking For the dressing: 1 cup mayonnaise 2 tsp Dijon mustard 1 tbsp red hot sauce Salt and pepper to taste 1 tsp garlic powder Method: Prepare the chicken: In a mixing bowl, add chicken and season with salt, pepper, red chili flakes, Cajun seasoning, and garlic powder. Heat oil in a pan and cook the chicken for 12-15 minutes or until fully cooked, flipping occasionally. Once cooked, remove and set aside. Prepare the dressing: In a bowl, add mayonnaise, Dijon mustard, red hot sauce, salt, pepper, and garlic powder. Mix well and set aside. Assemble the sandwiches: Toast the bread Layer the ingredients on three slices of bread: lettuce, tomato, cucumber, onion, roasted red peppers, cheese, and chicken. Spread the dressing on the remaining bread slices and place on top to complete the sandwiches.
