Broccoli cheddar soup in one pan and under 30 minutes🧀🥦🤍 serves 4-6 4tbsp butter 1 small white or yellow onion, chopped 1/2tsp salt and pepper 4 garlic cloves, minced 4tbsp all-purpose flour 1 cup whole milk 1 cup heavy cream 2 cups chicken stock/broth 3-4 cups chopped broccoli florets 1 carrot, diced small 2.5-3 cups mild cheddar cheese, freshly shredded Salt + pepper to taste. 1. In a dutch oven on medium heat, melt butter. 2. Add onions, salt and pepper and cook for about 5 minutes until softened. 3. Add garlic and cook for another minute. Sprinkle in flour and whisk. Cook for 2 minutes until it browns just a bit. 4. Whisk in heavy cream, milk and broth. Then add broccoli and carrot and stir well. 5. Lower temp to medium-low. Simmer for 20 minutes or until broccoli is fork-tender. Once fork-tender, gradually add in cheese, stirring, until melted and incorporated. 6. Taste for salt. Top with cheese and croutons.
