This creamy green kale rigatoni is one of the best dishes I ever made. Who knew turning kale into a pasta sauce could be so good 🤤 The fresh garlic definitely added that flavor I was looking for. If you don’t like kale, you’re going to love this. It will definitely be in my weekly home recipe rotation forever! Ingredients: 4 cups Kale (washed and cut into small pieces without the stems) 6 Garlic Cloves (minced) 1/3 cup Extra Virgin Olive Oil (you may need a little more) The Juice from (1) Lemon 1 Block Silken Tofu 2 Tbsp Nutritional Yeast 1/3 cup Mixed Nuts 10 oz rigatoni (about 2 oz per person) Chilli flakes Salt and pepper to Taste Instructions: Separate the kale leaves from the stalks (Blanch the kale in boiling water for 1-2 minutes until vibrant green. Drain and squeeze out excess water. In a food processor or blender, combine the kale, minced garlic, and olive oil. Blend until smooth. (you may need to add more olive oil if it’s too thick) Add lemon juice, toasted nuts, tofu, and nutritional yeast. Blend again until smooth, season with salt and pepper to taste. Cook the rigatoni in salted water until al dente. Reserve some of the pasta water before draining. Gradually add a little of the pasta water to the sauce to reach your desired consistency. Mix the sauce with the pasta, adding more water if needed. Top with chili flakes or your favorite garnishes. Enjoy!
