After instantly agreeing, I then realised I should put jelly inside them. So here we go; a popular sandwich filling, with the convenience of a cookie! These are vegan and gluten free peanut butter & jelly cookies; I finally got around to trying out chickpea flour in a sweet dish. Let me tell you; I was shocked at how good they were! The texture is soft and chewy; reminds me of the pastry on a Fig Newton (fig roll). Check the pinned comment for notes. I opted for classic strawberry jelly/jam in these, but it would work really well for most flavours.
