
Jamaican Pigeon Rice and Peas||Peas and Rice||Easy Recipe
There are many ways to make Jamaican Pigeon Rice and Peas, I'm making mine with Pigeon peas (non-canned) and fresh herbs that gives the rice such rich flavor. I hope you enjoy the video for this version of Jamaican Pigeon Peas and Rice also known as Gungo Rice and Peas. Pigeon Peas & Rice aka Gungo/Gunguh Rice and Peas ***Ingredients*** 3 Cups Cold Water 1 Cups Pigeon Peas 1/2 Onion 3 pieces Garlic 1 tsp of Salt ½ cup Coconut Milk 2 Cup Rice 3 Pieces of Scallion 3- 4 pieces of Fresh Thyme 1 tsp Fresh Ginger 1 Scotch Bonnet Pepper 1 tsp Smoked Paprika 1 tsp Black Pepper 1 tbs Avocado Oil or Butter 6 Whole Pimento seeds 2 to 3 Pieces of Turkey Bacon (optional) Season to Taste, Use additional seasoning if needed ***Instructions*** Boil Pigeon Peas for ½ hour add in Coconut Milk cook for another ½ hour, till Tender, if your peas is not tender continue to cook until it is soft. Add in Scallion, Fresh Thyme, Fresh Ginger, Scotch Bonnet Pepper, smoked Paprika, Black Pepper Avocado Oil or Butter, Whole Pimento seeds (Allspice), Turkey Bacon, Cook for 5 Minutes Before adding your Rice check your liquid, your peas should be Flavorful. Add in Rice bring to a boil for 10 to 15 Minutes on medium heat. At the end of 10 minutes fluff rice with a fork and reduce heat so your rice will steam. Apply parchment paper (helps with the steam). Let your rice steam for another 15 minutes at which time your rice should be tender and looking nice and fluffy.
