Why is This Banana Bread So Much Better Than Regular Banana Bread?
I was kicking around the kitchen last night and wanted to make some Dessert. I was out of Chocolate Chips so I ruled out my favorite, Toll House Cookies. But I had all the ingredients for Banana Bread, except the bananas I had on hand weren't over-ripe. I decided to use them anyway. I was raised in a frugal manner, and when bananas got too ripe to just peel and eat, Mumsy would stick them in the freezer for later. Then she would make Banana Bread, (sometimes, other times the bananas would hang out in the freezer for years, only to be tossed in the trash when the freezer got defrosted.). Frugality is good. But on further analysis, bananas are about $0.49 per pound. So a fresh banana, which tastes better than an old banana, is worth the money. That is, if you like the most delicious Banana Bread, so its worth the extra buck or two. You're worth it. So use fresh bananas. And throw out the old bananas. If you're a Boomer, you were probably told to eat all the food on your plate because "There are starving people in China." One of these things is not like the other. I couldn't give my leftovers to a starving Chinese person even if I wanted to. So stuffing it down my gullet wasn't something that would help the situation on the other side of the earth. Ingratitude wasn't my problem if I was already full of all the food my body wanted and needed. My problem was I didn't have the appetite because my body had had enough. Letting food go to waste was sinful. It isn't. If you go out and buy a pile of fresh produce, and don't eat it all before some of it goes bad, it still helps the farmer who grew it and truck driver who delivered it to the grocer who sold it. Put it in the compost heap or the recycle bin, but don't adhere to a ridiculous childhood admonishment that if you don't keep eating when you're body is satisfied then you're somehow hurting someone who doesn't have enough food. Half of my happiness comes from examining and rejecting outmoded ideas from childhood. Sorry Mom, if I make Banana Bread with old bananas, it doesn't taste as good as when I use bananas that aren't ready to be thrown out and are only good to use as filler for mediocre Banana Bread. Mediocre Banana Bread made with old bananas? Life's too short.
