CREAMY TUSCAN SALMON

Tonight’s dinner was supposed to be salmon bites, but I fancied something warm and comforting instead. This is the same recipe as my marry me chicken, but I swapped chicken for salmon! For two portions: For the salmon: 2 salmon fillets 1tbsp paprika, onion powder, garlic powder, Italian seasoning Salt & pepper For the sauce: 1 tbsp olive oil 50g diced sun-dried tomatoes 150ml chicken stock 50ml low fat cream 30g Parmesan 4-5 crushed garlic cloves 1tsp oregano, onion powder, garlic powder salt & pepper Pinch of chilli flakes Cover the salmon with all of the seasonings. Add some oil to a large pan. Add your salmon skin side down and cook for 3-5 mins each side, I then flipped it and cooked on the other side for a couple of mins. Then set the salmon to one side. Spray the pan with some more oil, then add your onion, oregano, and chilli flakes. Fry off until soft, then add in your garlic, fry for 30 seconds. Then add a splash of white wine to deglaze (not essential, but I had some open wine which needed using). Then stir in the chicken stock, cream, tomatoes and Parmesan. Bring sauce to a simmer, add back in the salmon.
