
Mango French Toast for summer brunch! #recipes #shorts
INGREDIENTS (makes 2 servings) 2 ripe and juicy mangoes 1/2 cup milk 1/2 tsp cardamom powder 1/3 tsp cornstarch/potato starch 1 tsp sweetener of choice - i used maple syrup 2 slices of bread - preferably brioche/challah 1 tbsp butter, unsalted Pistachios, to garnish Whipped cream, to garnish DIRECTIONS: Combine the milk, cardamom powder, cornstarch and sweetener in a flat bowl and mix thoroughly. Soak the bread in the mix, turning it after 30-40 seconds. Don't leave it in for too long. Heat up a skillet and add the butter. Toast the bread on both sides until golden brown. Layer fresh mango puree between two slices of the toast. Top with mango pieces, whipped cream and crushed pistachios. Sprinkle on some more cardamom powder for extra flair. Enjoy!
