Beef Ribs aka Dino Bones

Beef Ribs are one of the best BBQ bites around. If you are asking your butcher for these, ask for cut “123a”. I start by trimming all of the hard fat off the top so I have a nice surface for the binder and rub. I like to do my favorite beef rub on these ribs. WIth this cook I went 50/50 salt and pepper and some garlic junky on top to add a little garlic kick. I then cook at 225 degrees until they hit 160/170 degrees internal temperature. I am looking for the bark to set. This is when I would wrap the beef ribs in butcher paper and increase the temperature to 275 degrees.
