
Chicken Pot Pie - The Ultimate Homemade Comfort Food
This Southern classic comfort food will have your family and guests begging for more! This is my quick and easy spin on making a homemade classic comfort food that is perfect for the Fall, Winter or anytime you feel like making it! Tammy's Chicken Pot Pie Recipe: 6 tbsp (3/4 stick) unsalted butter 6 tbsp all purpose flour 1/2 cup onion, finely diced 1/2 cup celery, finely diced 1 14.5 oz can chicken stock plus 2 oz water 1 cup half and half 1 15 oz can diced potatoes, rinsed and drained 2 cups shredded cooked chicken, white and/or dark meat Seasoning: 1/2 tsp parley, 1/2 tsp garlic powder, 1/2 tsp salt, 1/2 tsp pepper 1 box refrigerated pie crusts (comes with 2 crusts) 1 egg & 1 tbsp water (egg wash) Preheat the oven to 375 degrees. Grease a 9 x 9 inch pie pan. Heat the butter in a large saute pan over medium-high heat. Add the onions and celery, season with salt and pepper and cook, stirring for 2 minutes. Stir in the flour and cook, stirring for 3 to 4 minutes to make a roux. Stir in the chicken stock and water and bring the liquid to a boil. Reduce the heat to medium-low and simmer until the sauce begins to thicken, 4 to 6 minutes. Stir in the half-and-half and continue to cook for another 4 minutes. Season with garlic powder, parsley, salt and pepper. Stir in the canned potatoes, carrots, peas, chicken and parsley, and mix well. Let simmer for another few minutes and set aside. Spray a pie pan or baking pan with non-stick oil and press down one of the rolled-out piecrusts. Pour the filling into the prepared pan. Place the second crust on top of the filling. Carefully tuck the overlapping crusts into the pan, forming a thick edge. Crimp the edges, brush with egg wash, cut vents in the top crust and place on a baking sheet before it goes into the oven. Bake until the crust is golden brown and crusty, 35 to 45 minutes. Let cool at least 20 to 30 minutes before slicing to serve. This video was quite a challenge to and edit and post.
