To make the cherry ice cream, roughly chop the cherries, add sugar, and water in a saucepan over low heat. Cook, stirring, for 2 mins or until sugar dissolves. Cook, stirring occasionally, for 6-8 mins or until cherries soften and thickens. Set aside to cool. 2. Let the cherry mixture cool and grind in a mixer jar until it smooth. Cool cherry pulp in the fridge for 15mins. 3. Use an electric beater to whip the whipping cream in a large bowl until it reaches to Stiff or firm peaks 4. Transfer cream to a metal or plastic container and add cherry pulp. 5. Gradually stir whipping cream with cherry pulp until well combined. Add cherry pieces to a ice cream. 6. Cover with cling fling wrap or foil and place in the freezer for 4 - 6 hours or until firm. • Perfect when paired with vanilla or chocolate.
