When I first learned to make this kimchi, I thought that it was most difficult to cut the radishes into uniform cube shapes I used to spend many hours practicing with a sample shape and size But now I realize that the shape is not as important as the overall taste I also make this kimchi with the leftover radishes and seasoning after making napa cabbage kimchi It's a good way to use up all the leftover vegetables and can be eaten while waiting for the cabbage kimchi to ferment When I was a child, my mother used to add a tablespoon of tomato ketchup to the radish kimchi seasoning This will soften the spicy taste while adding a touch of tart sweetness as well It is a good way to introduce young children to enjoy kimchi as well It's best to make this kimchi during the months of November to February as radishes taste best during the cold weather months as they taste sweet and stay crunchy for a longer period Ingredients: - 2 large radishes - ½ bunch of scallion - ½ bunch of mustard greens For the kimchi seasoning: - 1 cup gochugaru - ½ onion pureed - ½ Asian pear pureed - ½ apple pureed - ½ cup pureed radish - ½ cup fish sauce - 2 Tablespoon minced garlic - 1 Tablespoon minced ginger - 1 cup of rice porridge - 1 cup veggie stock Recipe: - Clean and wash the radishes and cut into cube shapes - Salt lightly and let it sit for 30 minutes - Clean and dry the vegetables - Cut the green onions and the mustard greens into 1 inch in length - Mix all the ingredients for the seasoning and add the cut vegetables and the salted radishes - Make sure that seasoning is evenly spread over the radishes - Transfer into a kimchi container and leave to ferment at room temperature overnight before putting it into the refrigerator - You can use kohlrabi or even jicama to make kimchi with the same seasoning 👩‍🍳 Support Diana's Table Please like, subscribe, and comment your thoughts on this video Also, feel free to request and send ideas for dishes my way Try my recipes and share them with me on social media 🤖 FOLLOW ME ON Instagram: Facebook: 📧 FOR INQUIRIES dianakangstable@gmail com 🍽️ Thank you for your support!
