Mix Vegetable Pakora Recipe Ingredients: Carrot, shredded: 1/2 cup Cabbage, shredded: 1/2 cup Onions, sliced: 1/2 cup Potatoes, shredded: 1/2 cup Green chillies, chopped: 3 Red chilli powder: 1 tbsp Tandoori masala: 1.5 tbsp Coriander powder: 1.5 tbsp Baking soda: 1/2 tbsp Ginger-garlic powder: 1 tbsp Salt: 1 tbsp Fresh coriander: As per need Cumin seeds: 1 tbsp Gram flour (besan): 300g Water: 1 glass Oil: As per need for frying Procedure: Prepare Vegetables (5 minutes): In a large mixing bowl, add 1/2 cup each of shredded carrot, cabbage, onions, and potatoes. Chop 3 green chillies finely and add to the bowl. Add Spices (3 minutes): Add 1 tbsp red chilli powder, 1.5 tbsp tandoori masala, 1.5 tbsp coriander powder, and 1/2 tbsp baking soda to the vegetables. Add 1 tbsp ginger-garlic powder and 1 tbsp salt. Sprinkle fresh coriander and 1 tbsp cumin seeds into the mix. Mix Dry Ingredients (2 minutes): Gradually add 300g gram flour to the vegetable mixture. Mix well to coat the vegetables evenly with the flour and spices. Prepare Batter (2 minutes): Slowly pour in 1 glass of water while stirring to form a thick batter. Ensure the batter is well combined and the vegetables are coated. Heat Oil (5 minutes): In a deep frying pan, heat oil over medium-high heat. Make sure there's enough oil to fully submerge the pakoras. Fry Pakoras (10-12 minutes): Once the oil is hot, drop spoonfuls of the batter into the oil. Fry the pakoras in batches until they are golden brown and crispy, turning occasionally for even cooking. Drain and Serve (2 minutes): Use a slotted spoon to remove the pakoras from the oil and place them on a paper towel-lined plate to drain excess oil.
