Suji Palak Idli with Coconut Chutney Serves 2‑3 Ingredients Idli batter 1 cup fine semolina (suji) ½ cup plain yogurt 1 cup water (adjust as needed) 1 cup fresh spinach, finely chopped or blended ½ tsp salt ¼ tsp baking soda (optional, for fluffier idlis) Coconut chutney ½ cup grated fresh coconut 1 green chili (optional) ½ tsp cumin seeds 1 tbsp roasted peanuts or cashews (optional) Salt to taste ¼ cup water (more if needed) Method 1. Mix batter – In a bowl combine suji, yogurt, water and salt. Stir until smooth; let it rest 10 min. 2. Add spinach – Fold in the chopped spinach (or spinach puree) and, if using, baking soda. The batter should be thick but pourable. 3. Steam – Grease idli molds, pour batter to about ¾ full, and steam on medium heat for 10‑12 minutes. Insert a toothpick; it should come out clean. 4. Blend chutney – While the idlis cook, blend coconut, chili, cumin, peanuts, salt and water until smooth. Adjust consistency with extra water if needed. 5. Serve – Remove idlis, drizzle a little oil if you like, and serve hot with the coconut chutney. Enjoy a light, nutritious twist on classic idli!
