Easy steps to make authentic Tres Leches cake Ingredients: ( ~10 servings ) For cake: All-purpose flour - 1 cup Baking powder - 1 ½ teaspoon Eggs - 5 ( separated yolks and whites ) Salt - ¼ teaspoon Vanilla extract - 1 teaspoon Whole milk - ⅓ cup Sugar - ⅔ cup ( separated in ½ and ⅙ cup ) Milk Mixture: Evaporated milk - 12 oz ( 1 can ) Condensed milk ( sweetened ) - 14 oz ( 1 can ) Whole milk - ¼ cup Whipped cream: you can use store bought or make one from ingredients below Heavy whipping cream - 2 cups ( one package ) Powdered sugar - 3 tablespoons Vanilla extract - ½ teaspoon Ground cinnamon, mint leaves and berries - ( optional ) for decoration. First time I have tried this dessert in Cabo about 10 years ago and since then it has become one of my favorite desserts. My son's birthday is coming up, so it will be a great surprise for him….he is a big fan! Let’s bake! Step#1 In a medium bowl combine flour, baking powder and salt. Separate yolks and egg whites into two containers Add ½ cup of sugar to the egg yolks. Beat yolks with electric mixer on the high speed for about 2 min or until it turns pale yellow. Then stir in ⅓ cup of milk and vanilla extract. Pour the egg yolk mixture over the flour mixture and combine using spatula. Make sure you don’t overmix. Using an electric mixer, beat the egg whites on high speed for about 1 minute. Then add remaining sugar ( ⅙ of the cup ) and beat with the mixer on high speed for another minute. Combine flour and egg white mixture together with the spatula. Now, pure the mixture to the casserole dish Preheat the oven to 350° Fahrenheit and bake it for about 30 minutes. You can use a toothpick to check if it is ready. If the toothpick comes out clean, it is baked. Step#2 Let cake cool down In the meanwhile you can create three milk mixtures by combining evaporated, condensed and whole milk. Mix it well with the spatula Using the fork, make holes in the cake across the entire surface. Pour milk mixture on top and put it in the fridge for at least 2 hours. Ideally you will let it soak overnight. Step#3 Right before serving, create whipped cream by beating heavy cream, sugar and vanilla until firm peaks. Cover the cake with the whipped cream. You can use a pastry decorator. Optionally you can add some berries and sprinkle some cinnamon on top. Cake came out super moist and was eaten extremely fast. Let me know if you like this recipe.
