
Old Fashioned Banana Pudding

I haven’t made it in about 45 years. Unfortunately, she never wrote the recipe down for me. So, I’m winging it for now based on memories with her. Aunt DeeDee ********************************** Old Fashioned Banana Pudding Ingredients 2 cups (16 ozs) Evaporated Milk 1 1/4 cup granulated sugar 3 tbs all purpose flour 1/4 tsp salt 4 Egg Yolks 2 tsps vanilla extract 1 1/2 tbs Unsalted Butter 3 tbs whole milk 1 Box NABISCO Nilla wafers 3-4 Bananas 1/2 freshly squeezed lemon juice Meringue Ingredients 4 Egg Whites 3 tbs granulated sugar 1 tsp Cream of Tartar Directions Add sugar , flour, and salt and use a whisk to blend it well. Add the evaporated and whisk until it is well incorporated with no lumps. Place on medium heat and continuously whisk for 5-7 minutes. Next temper the eggs by adding 3-4 small tablespoons of the warm liquid to the bowl of egg yolks and stir to bring the eggs to the same temperature. Slowly whisk the egg mixture into the large pot of mixture. Continue to whisk until the mixture begins to thicken. Remove from heat and add 3 tablespoons of whole milk. Whisk well and add the vanilla extract and butter. Stir well. Set aside. Slice the bananas and squeeze half of a lemon over them. Rub the lemon juice all over the bananas. Add a ladle of pudding on the bottom of a 9x9 pan. Place Nilla Wafers in tows on top of the pudding. Place a layer of bananas over vanilla wafers. Then spread a layer of pudding over bananas. Repeat two more times. Meringue Directions In a small bowl, beat the egg whites on high speed until it becomes thick. Add the sugar and cream of tartar. Continue to beat until stiff and peaks are visible. Spread the meringue on top of the banana pudding. Place in the oven on high broil for no more than 1-2 minutes. Remove when lightly browned. Any longer than two minutes will cause the meringue to burn.
