Get your greens in with this recipe for crunchy bhindi in a yogurt sauce by Chef Rafia @rafmazcooks . Here, she uses Shan’s Vegetable Masala, which includes clove, garlic, cinnamon, black pepper, and cumin, among other spices, for some punchy flavour. Dahi Bhindi Ingredients: 250 g ladyfinger (head & tail removed) 1 cup yogurt 1 tsp salt ½ tsp Shan Red Chilli powder ½ tsp Shan Turmeric powder ½ tsp Shan Coriander powder 2 tbsp water Oil as required 1 tsp zeera 1 tbsp Shan Ginger Garlic paste 1 small onion chopped ½ tsp Shan Sabzi Masala Chopped coriander Instructions: Mix the yogurt, salt, red chilli, turmeric, dhania powder and water till smooth. In a pan, fry the ladyfinger in some oil till almost done and bright green (should be crunchy). Remove the ladyfingers. Add some more oil and fry the zeera, Ginger Garlic paste and onion till softened. Add the yogurt sauce and cook till oil separates. Add the ladyfinger, Shan Sabzi Masala and coriander. Mix well.
