EASY Cheesy Zucchini Breadsticksđ§ WW Friendly/Weight Watchers Points/Calories/Macros Low Carb Recipe Zucchini Recipe These cheesy breadsticks use zucchini in the crust, making them a low carb, healthier alternative to traditional cheesy breadsticks. They still pack a ton of flavor and hit the spot when you want cheesy breadsticks but don't want all the calories, carbs and points! Dip them in a low point/calorie marinara sauce for a delicious, easy appetizer! Ingredients: 1 pound Uncooked zucchini, shredded 1 large Egg 1 1â2 cup Part skim mozzarella cheese shredded, 1/2 cup for breadsticks, 1 cup for topping 1â2 cup Shredded parmesan cheese 1â2 tsp Garlic salt 3â4 tsp Italian seasoning, 1/2 tsp for breadsticks, 1/4 for topping Grate zucchini. Squeeze out as much liquid as possible by placing it into a kitchen towel and squeezing. The more liquid removed, the more breadlike your sticks will be. In a bowl, combine the grated zucchini, 1/2 cup mozzarella cheese, parmesan cheese, egg, garlic salt and Italian seasoning. Stir well to combine. Spray a 9X13 baking sheet with cooking spray, line with parchment paper, and spray the parchment paper with cooking spray. Spread out the zucchini mixture. It will be thin. Pat down. Bake at 425F for 20-25 minutes. Top baked crust with remaining cup mozzarella cheese. Bake again at 425F second time for 5-8 minutes, until the cheese melts and gets golden brown. Makes 6 servings of two breadsticks. WW Points per serving - 4 PTs.
