Sourdough Starter

I don’t know who needs to hear this, but there’s no single “right” way to maintain a sourdough starter—there are many right ways. It’s all about finding what works for you and your baking routine. Maintaining a sourdough starter means regularly feeding it fresh flour and water. Start with a small amount of ripe or slightly overripe starter, feed it with flour and water (I recommend at least a 1:1:1 ratio), and watch it ferment. Mark your jar to see how it rises as the wild yeast develops and falls when it’s time for the next feed. You decide the type of flour, the feeding schedule, the temperature and the ratio—it’s your starter, your way. With a little practice, sourdough starter care becomes simple. Want to learn more?
