Spicy Masala Chicken Curry Ingredients For Marination: • 1 spoon ginger-garlic paste • 5-6 spoons curd • Salt (as per taste) • 1 spoon red chili powder • ½ spoon turmeric powder • 1 spoon mustard oil For Masala: • 2 spoons mustard oil • Salt (as per taste) • 2 bay leaves • 2 black cardamoms • 4 green cardamoms • 2 cinnamon sticks • 4-5 cloves • 6-8 black peppercorns • 1 star anise • 1 spoon cumin powder • 5-6 onions (sliced) • 2 spoons red chili powder • ½ spoon turmeric powder • 2 spoons coriander powder • ½ spoon garam masala • 1 spoon cumin powder • ½ spoon red chili flakes • 2 spoons kasuri methi • 2-3 tomatoes (pureed) • ½ spoon black cardamom powder • 3-4 slit green chilies • Fresh coriander leaves for garnish • Hot water (as required) ⸻ Instructions Step 1: Marination 1. In a bowl, mix chicken with curd, ginger-garlic paste, salt, red chili powder, turmeric powder, and mustard oil. 2. Let it marinate for at least 1-2 hours (overnight for best results). Step 2: Preparing the Masala 3. Heat mustard oil in a pan or kadai until it starts smoking slightly. 4. Add bay leaves, black cardamoms, green cardamoms, cinnamon sticks, cloves, black pepper, star anise, and sauté for a few seconds until aromatic. 5. Add sliced onions and cook until they turn golden brown. Step 3: Cooking the Curry 6. Add salt, red chili powder, turmeric, coriander powder, cumin powder, and red chili flakes, and sauté well. 7. Pour in tomato puree and cook until the oil separates. 8. Add kasuri methi and mix well. 9. Pour some water and let the masala simmer for a few minutes. Step 4: Adding the Chicken 10. Add the marinated chicken to the masala and cook on medium-high heat for 5-7 minutes. 11. Add black cardamom powder and slit green chilies. 12. Pour hot water as needed for the desired gravy consistency. 13. Cover and let it cook on low flame for 20-25 minutes or until the chicken is fully cooked. Step 5: Garnishing and Serving 14.
