Ingredients For the Chicken 2 boneless, skinless chicken breasts 1 tbsp olive oil 1 tsp garlic powder 1 tsp paprika ½ tsp black pepper ½ tsp salt ½ tsp dried oregano or thyme 1 tbsp lemon juice For the Vegetables 1 bell pepper (red, yellow, or green), sliced ½ zucchini, sliced ½ onion, sliced 1 small carrot, julienned 1 tbsp olive oil ½ tsp salt ½ tsp black pepper ½ tsp dried basil For the Sandwich 4 whole wheat or ciabatta sandwich rolls 4 tbsp mayonnaise or Greek yogurt 1 tsp mustard (optional) 1 cup lettuce leaves 4 tomato slices 4 slices of cheese (cheddar, Swiss, or mozzarella) Instructions 1. Marinate and Grill the Chicken In a bowl, mix olive oil, garlic powder, paprika, black pepper, salt, oregano, and lemon juice. Coat the chicken breasts with the mixture and let them marinate for 15-20 minutes. Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for about 6-7 minutes per side or until fully cooked. Remove from heat, let it rest for 5 minutes, then slice into thin strips. 2. Grill the Vegetables In a bowl, toss the bell peppers, zucchini, onion, and carrot with olive oil, salt, pepper, and basil. Grill the vegetables for 3-4 minutes on each side until slightly charred but still tender. 3. Assemble the Sandwich Cut the sandwich rolls in half and toast them lightly if desired. Spread mayonnaise (or Greek yogurt) and mustard on one side. Layer lettuce, grilled chicken slices, grilled vegetables, tomato slices, and cheese. Close the sandwich and serve warm.
