For the Loaf: 1 Cup Cottage Cheese (blended until smooth) 1 1/2 Cups Almond Flour 1/4 Cup Coconut Flour 1/4 Cup Erythritol and Monk Fruit sweetener (you can adjust this and add more for a sweeter loaf.) 4 Eggs 1/4 Cup Unsweetened Almond Milk 1/4 Cup Melted Butter Zest of 2 Lemons 1/4 Cup Freshly Squeezed Lemon Juice 1 Tsp. Vanilla Extract 1 Tsp. Baking Powder 1/4 Tsp. Baking Soda Pinch of Salt For the Glaze: 1/4 Cup Powdered Erythritol 2 Tbsp Freshly Squeezed Lemon Juice 1 Tbsp Unsweetened Almond Milk (adjust for consistency.) INSTRUCTIONS: 1.Preheat oven to 350*F (175*C) Line a 9” x 5” loaf pan with parchment paper or grease it lightly. 2. Blend Cottage Cheese until smooth and creamy. 3. Whisk together ALL wet ingredients 4. Fold in ALL the dry ingredients 5. Bake 40 – 45 minutes or until a toothpick inserted in the center comes out clean. Let loaf cool in pan for 10 minutes, then transfer to a wire rack to cool completely. 6. Prepare the Lemon Glaze. Whisk together powdered sweetener, lemon juice & almond milk to create the glaze. Add more almond milk if necessary to reach desired consistency. 7. Drizzle the lemon glaze on top of the cooled loaf. Enjoy! 🤔 NOTE: As you’ll see in the video, my loaf cake FELL! I’ve never had a cake fall before, so I was curious if it was because I used Allulose (instead of erythritol, which the recipe called for.) Since the Keto Twins said they got this recipe from a.i., I went to the source and asked Chat GPT why it might have fallen, and here was the response: 1. Moisture Content from Cottage Cheese 2. Allulose Behaving Differently – You nailed it! Allulose caramelizes and retains moisture more than erythritol or sugar. It also doesn’t crystallize the same way, which can make keto cakes denser and more prone to sinking after cooling. 3. Underbaking (Even at 45 Minutes.) This recipe has a lot of moisture (from cottage cheese, almond milk, and lemon juice) so it might have needed an extra 5-10 minutes. 4. Baking Powder/Soda Reacting Too Fast – The combo of acidic lemon juice + baking soda + baking powder could have caused the loaf to rise quickly, then collapse. Ways to Prevent It Next Time: ✔️ Try a mix of erythritol + allulose instead of just allulose. ✔️ Bake 5-10 minutes longer and check with a thermometer—internal temp should be ~200°F (93°C). ✔️ Reduce baking soda slightly to prevent over-rising. ✔️ Let it cool completely in the pan before transferring—this helps the structure set. Follow the recipe and don’t improvise (like I did – YIKES!) I almost NEVER change a first-time recipe; I just prefer Allulose. It was my undoing!
