Heat Oil/Ghee: In a pressure cooker or deep pan, heat oil or ghee. Add cumin seeds, bay leaf, cloves, cinnamon, and cardamom. Sauté until aromatic. 2. Sauté Onions & Spices: Add sliced onions and sauté until golden brown. Stir in the ginger-garlic paste and cook for a minute. 3. Add Tomatoes & Masala: Mix in chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes turn soft. 4. Add Green Chana: Stir in green chana and cook for 2–3 minutes, allowing the flavors to blend. 5. Cook Rice: Add the soaked rice and mix gently. Pour in water and garam masala. 6. Simmer or Pressure Cook: If using a pressure cooker, cook for 2 whistles on medium flame. If using a pot, cover and simmer until rice is fully cooked and water is absorbed. 7. Fluff & Garnish: Let the pulao rest for 5 minutes. Fluff it with a fork and garnish with fresh coriander leaves. 8. Serve Hot: Enjoy with raita, yogurt, or a side salad.
