Ingredients: 1 baingan (medium size, chopped into cubes) 1 medium potato (boiled and chopped into cubes) 1/2 cup matar (green peas) 1-2 tamatar (finely chopped) 1 small simla mirch (green capsicum, finely chopped) 1 onion (finely chopped, optional) 2-3 green chilies (finely chopped) 1 teaspoon cumin seeds (jeera) 1 teaspoon ginger-garlic paste 1/2 teaspoon turmeric powder (haldi) 1 teaspoon red chili powder 1 teaspoon coriander powder (dhania powder) 1/2 teaspoon garam masala Salt to taste Fresh coriander (chopped, for garnish) 2 tablespoons oil Instructions: Prepare the Ingredients: Baingan, aloo, simla mirch aur tamatar ko ache se chop kar lein. Matar ko bhi ready kar lein. Cook the Baingan: Ek pan mein 1 tablespoon oil garam karein. Baingan ke tukde daal kar halka sa fry karein, taaki wo thode crispy ho jayein. Baingan ko plate mein nikaal kar side mein rakh lein. Prepare the Masala: Us he pan mein thoda aur oil daalein aur jeera daalein. Jab jeera thoda crackle ho jaye, tab usmein chopped onion (agar use kar rahe hain) aur ginger-garlic paste daal kar fry karein. Jab tamatar soft ho jayein, tab simla mirch aur boiled aloo daal kar mix karein. Add Matar and Baingan: Ab ismein matar aur baingan daal kar sabko achhe se mix karein. Salt aur garam masala daalein. Thoda paani daal kar sabko dhak kar 5-7 minutes tak pakne de, taaki sab sabzi achhe se mix ho jayein. Garnish and Serve: Sabzi ko fresh coriander se garnish karein aur garama garam roti ya paratha ke saath serve karein. Yeh sabzi bahut hi masaledar aur tasty banti hai, aur aap ise lunch ya dinner mein enjoy kar sakte hain!
