Here is a full “Ukadiche Modak (उकडीचे मोदक)” Recipe for you: Modak: Approximately 25 N Ingredients: Coconut: 1 N Jaggery: 100 gm Rice Flour: 250 gm Water: 250 ml Dry Fruits (Almonds, Cashew Nuts, Raisins) Cardamom Nutmeg Ghee Oil Preparation: Chop the jaggery finely Break the coconut and grate it Chop the almonds, cashews and raisins Now make cardamom and nutmeg powder Saran (stuffing) making: With 1 spoon of ghee, cook the jaggery in a vessel Cook the jaggery until it turns a nice reddish color and then add all the dry fruits to it Fry it a little and add grated coconut to it Now, we have to fry all this together until the saran gets a nice color Now add cardamom and nutmeg powder and mix it well Ukad (Dough) making: Heat water in a vessel and add rice flour to it. Take equal amounts of water and flour. Add the flour little by little until it looks like the one shown in the video. Make it a little soft so that the Modaks will shape well and not break. If required, add 1 teaspoon of ghee to it while heating the water so that the dough does not stick while kneading. Now turn off the gas and cover it for 5 to 10 minutes. Take this on a plate and knead the dough well using a little water. If the dough feels sticky while kneading, then use ghee or oil. Recipe: Apply oil on your hands to roll a small ball out of dough. As shown in the video, while rolling the Pari (outer layer of Modak), you have to start from the outside first. Then, gently spread the dough from the inside and make a flat bowl-like shape. Now, once again, oil your fingers and start making the buds of the Modak by placing the first finger on the inside of the Pari and the thumb and middle finger on both sides. Do not leave too much space between the two buds so that more buds can be made and the Modak will look attractive. Now, fill it with a spoonful of Saran and use your entire palm to close the buds. When the Modak is half closed, use the part between the upper finger and thumb to stick all the buds on the top. Do not use your fingers while shaping the Modak. This way the Modak becomes very nice. Now, Place a banana leaf in a mesh pot and grease it with oil. Also oil all the Modaks and place them on the banana leaf. Heat water in a vessel. Add tamarind, kokum or lemon peel to it. This will prevent the pot from turning black. When the water is hot, place the Modak mesh on it and steam the Modak for about 15 minutes with a lid on. The delicious “Ukadiche Modaks” are ready!
