A spicy and savory stew that is sure to warm you up on a cold winter day Use gochujang to create this easy, yet delicious stew If you like gochujang, this one is perfect for you Loaded with potatoes, vegetables, and impossible meat, this might be one of my favorites now I've catered this recipe to not be overly spicy, yet still making it very much gochujang-like Give this a shot, promise you won't be disappointed :) Let me know what other recipes you'd like to see next! Vegetarian Oyster Sauce: Ttukbaegi - Korean Stone Bowl: INGREDIENTS 2 ½ cups rice water 1 potato 3 mushrooms 2 stalks green onion ½ onion 1 tbsp sesame oil 1 tbsp avocado oil 6 oz Impossible Meat 1 tbsp vegetarian oyster sauce 2 tbsp gochujang 1 tbsp gochugaru 2 tbsp garlic 3 tbsp soup soy sauce 8 oz tofu MSG Black pepper DIRECTIONS (Serves 2) 1 Rinse rice and save rice water after first rinse Start cooking rice by using rice cooker or stove top 2 Peel potato and cut into bite size pieces The smaller the cut, the faster the dish cooks 3 Cut mushrooms into slightly larger chunks 4 Cut green onion into ½ inch chunks 5 Cut onion into thin slices 6 Heat up sesame oil and avocado oil over medium heat Stir fry impossible meat for 1 minute, then add oyster sauce, stirring well to combine 7 Drop heat to medium-low Push meat to the side and add gochujang into the oil 8 Stir fry gochujang constantly for about 3 minutes 9 Add gochugaru, stir well, and immediately pour in rice water 10 Turn heat up to high and add potato Then add garlic and soy sauce 11 Let come to boil and then add rest of vegetables Let boil for 3 minutes 12 While boiling, cut tofu into bite size pieces and then add into soup after time is up 13 Stir well to combine and add MSG if desired 14 Taste for seasoning and adjust with salt 15 Serve in ttukbaegi or bowl of choice and serve with bowl of rice 16 Enjoy :) instagram: #vegan #pandaskitchen
