It's a go-to breakfast option that's both filling and healthy. 👩🍳 Ingredients: 1 cup semolina (rava/suji) 2 tablespoons oil or ghee 1 teaspoon mustard seeds 1 teaspoon urad dal (split black gram) 1 teaspoon chana dal (split Bengal gram) 10-12 cashew nuts (optional) 1-2 green chilies, finely chopped 1-inch ginger, grated or finely chopped 1cup carrot and beans chopped 3 cups water Salt to taste Freshly chopped coriander leaves for garnish Lemon juice to taste (optional) Method Roasting Semolina: Heat a pan on medium flame and dry roast the semolina until it turns light golden and aromatic. Stir continuously to prevent burning. Once done, transfer to a plate and set aside. Tempering: In the same pan, heat oil or ghee. Add mustard seeds and let them splutter. Add cumin seeds, urad dal, and chana dal. Fry until they turn golden brown. Add cashew nuts (if using) and fry until golden. Sautéing Vegetables: Add chopped carrots and beans . Cook for 3-4 minutes until the vegetables are slightly tender. Cooking Upma: Pour in the water and add salt. Bring the mixture to a boil. Gradually add the roasted semolina while continuously stirring to prevent lumps. Reduce the heat to low and cover the pan. Let it cook for 3-4 minutes or until the semolina absorbs all the water and the upma becomes soft and fluffy. Turn off the heat and let the upma sit for a couple of minutes. Finishing Touch: Fluff the upma with a fork. Garnish with freshly chopped coriander leaves and a squeeze of lemon juice (if desired).
