Sourdough Chocolate Cake Dry Ingredients • 1 ½ cups flour • 1 ¾ cups sugar • ¾ cup cocoa powder • 2 tsp baking soda • 1 tsp baking powder • 1 tsp salt Wet Ingredients • ½ cup neutral oil • 2 eggs • 2 tsp vanilla extract • ¼ cup sourdough discard (chocolate or regular) • ¼ cup sour cream • ¾ cup buttermilk • 1 cup hot coffee ⸻ Chocolate Buttercream • 1 ¼ cups softened butter • 3 cups powdered sugar • ¾ cup cocoa powder • ½ cup heavy cream • 1 tsp vanilla extract • ¼ tsp salt ⸻ Instructions 1. Preheat oven to 350°F. 2. Line a half sheet pan with parchment paper and lightly spray with nonstick spray. 3. In a small bowl, whisk together all dry ingredients. 4. In a large bowl, mix all wet ingredients until smooth. 5. Add dry ingredients to the wet and whisk until just combined. ⸻ Optional Overnight Ferment: If you’d like a more gut healthy / gut friendly option, you can cover the batter (without the baking soda, baking powder, and hot coffee) and refrigerate for at least 12 hours. The next day, bring to room temp, whisk in the baking soda, baking powder, and hot coffee, then continue. If you’re baking right away, proceed directly to Step 6. ⸻ 6. Carefully pour in the hot coffee (or add after overnight ferment) and mix slowly until batter is smooth and uniform. 7. Pour into prepared pan and bake for 12–18 minutes, or until the cake springs back when gently touched or a toothpick comes out clean. 8. While the cake bakes and cools, prepare the buttercream by mixing all ingredients in a stand mixer (or use a hand mixer or whisk) until light and fluffy. 9. Once the cake is fully cooled, spread with chocolate buttercream. Serve as a single layer sheet cake or stack for a layered version.
