Roasted Red Pepper and Tomato Soup – Easy Healthy Recipe This roasted red pepper and tomato soup is a super simple healthy dinner recipe. The sweetness of the roasted peppers and tomatoes needs a little bland creaminess, so I use fat-free cottage cheese. Quick to make, light, and seriously comforting. There is also a paid subscriber option to get access to exclusive recipes x john Serves 2 450g tomatoes, halved 4 red peppers, cut into large pieces 2 tbsp olive oil, plus extra for drizzling 1 tsp dried oregano Whole bulb of garlic 150g fat free cottage cheese 2 tsp rose harissa ¼ tsp Baharat 10g pine nuts A small handful of finely chopped parsley leaves A pinch of Turkish pepper flakes Salt and pepper 1. Pre-heat the oven to 180c fan. Pop the tomatoes and peppers onto a baking sheet. Add the olive oil, oregano and plenty of salt and pepper. Toss together. Add the garlic and drizzle over a little more oil. Roast for 45 minutes until everything is lovely and squidgy. 2. Transfer the tomatoes, peppers and all the juices into a blender. Squish out the garlic and pop that in. Add the cottage cheese, harissa, Baharat and a pinch of salt and pepper. Blitz until lovely and creamy. Pour into two bowls and garnish with the pine nuts, parsley, and Turkish pepper flakes. Drizzle over a little olive oil and a little of the harissa oil.
