To start this recipe, 1st of all you need to make the mustard paste. For this soak black and yellow mustard seeds in normal water for half an hour. After half an hour strain the water and wash mustard seeds well. Then grind them into a thick smooth paste by adding 1tsp salt and little amount of water at a time. 2. Next marinate all the hilsa fish pieces with 1tsp turmeric powder, 1tsp salt and 1tbsp mustard oil. Keep them aside for 10 minutes. 3. Meanwhile, in a heated pan or kadai add 2tbsp mustard oil & heat it till smoke comes out. Once heated, lower the flame, add black cumin or nigella seeds and all the slitted green chillies. Fry for few minutes in lower heat. 4. Next in a bowl, add 1tsp turmeric powder, 1tsp red chilli powder and 2tbsp water. Mix well and pour the mixture into the oil in the kadai. Fry the masalas on medium flame for 2-3 minutes ⤵️. 5. When you see ⬆️ oil starts separating from the masalas, add 2cups of water and mix well. Cover with a lid and bring it to a boil. 6. Then open lid and very carefully add the marinated raw hilsa fish pieces. Cover the kadai with a lid and cook each side for 10 minutes in low to medium flame. Flip the fish pieces once in between very carefully ⤵️. 7. Then add the mustard paste and mix well but very gently. Always remember that hilsa is a very delicate fish so while cooking with raw hilsa pieces you need to be extra careful. Cover and cook for another 10-12 minutes in low-medium heat ⤵️. 8. Next add the coconut milk and gently mix. If the gravy becomes too thick, add 1cup of hot water or as per your requirement. Again cover with the lid and let it cook for few more minutes till you get the desired consistency of the gravy. 9. Finally adjust salt and sugar (add if required) according to your taste. Turn off the flame. Add 4-5 whole green chillies and pour some mustard oil on top ⤵️. Cover the kadai and rest it for another 10-15 minutes before serving. And the lip-smacking delicious Hilsa in Mustard Gravy or Shorshe Ilish is done and ready to serve now 😋.
