Ever feel like you need to keep adding flour in sourdough recipes!? Heres why!
Explaining the importance your discard consistency plays in your sourdough recipes and why sometimes it seems like you need to add more flour. Basically if you have a thick discard then you need less flour (and often my recipes are created using thick discard) vs. a soupier, flatter discard that has been dormant for a while may require you to add more flour to an already existing recipe! Ratios matter in sourdough and with discard recipes its important not to get too hung up on needing to add a bit more flour here and there! Try not to add too much to cookies and cake/brownie batters or you wind up with dry caky end product and no one wants that! You should never have to add flour to a bread recipe if your leaven is the proper consistency!! Learn more about that in my video here: • Sourdough Levain! The ONE thing that ...
