Manual Focus Southern Black Eyed Peas Recipe 16oz Black Eyed Peas 2 Smoked Turkey Legs 5-6 Strips of Thick Cut Bacon 4 Cups Chicken Broth 4 Cups Water 3 Bay Leaves 1 Tsp Thyme 1 Tsp Cajun Seasoning 1 Tsp Creole Seasoning 5 Cloves Garlic Minced 1 Yellow Onion 1 Rib Celery 1/2 Bell Pepper #blackeyedpeas Preparations Sort and Discard any discolored or cracked peas. Soak in water for at least 2 hrs. This isn't mandatory but helps the black eyed peas cook quicker. Place Turkey Legs in Pot and allow to boil while prepping the other ingredients. In a separate pan cook bacon until desired crispiness and remove. Using the grease from the bacon sauté the onion, bell pepper and celery for 5 minutes. Allow onions to remove the caramelized bits on the bottom of the pan (fond). Once the trinity has softened add minced garlic and allow it to be come fragrant. Add sautéed veggies in pot. Add seasoning and add the black eyed peas and allow them to simmer for an hour. After an hour check for tenderness of the turkey legs and the tenderness of the black eyed peas. If the turkey is tender go ahead and remove from the pot and shred. If black eyed peas are not fork tender at this moment allow them to continue to cook until fork tender. Lightly Season the smoked turkey legs and add them along the bacon. Serve and enjoy!
