Dried shrimps cooked with the flavour of raw mangoes and a medley of masalas. Quick, easy & comforting! KAIRI SUKAT Ingredients 1 medium raw mango (kairi) 2 cups dried shrimp (sukat) 3 tbsps oil 1 tsp cumin seeds 2-3 green chillies, chopped 2 large onions, finely chopped + for garnish Salt to taste 1 large tomato, finely chopped 2 tsps red chilli powder ¼ tsp turmeric powder 1 tsp garam masala powder 1 tbsp lemon juice ¼ cup chopped fresh coriander leaves Raw mango wedge for garnish To serve Bhakris as required Lemon wedges Green chillies Method 1. Dry roast dried shrimp for 3-4 minutes in a kadai. Transfer into a strainer and wash it thoroughly with sufficient water. 2. Heat oil in the same kadai. Add cumin seeds and let them change colour. Add green chillies and onions and sauté till translucent. Add salt and mix well. Cook till the onions turn golden brown. 3. Add tomato, mix and cook till it turns soft and pulpy. Add raw mango, red chilli powder, turmeric powder and garam masala powder and sauté for 1-2 minutes. 4. Add the dried shrimp and mix well. Add salt and sauté for a minute. 5. Add coriander leaves and mix well. 6. Garnish with chopped onions and raw mango wedge. Serve with bhakris, lemon wedges and green chillies.
