So let’s get started.” Ingredients List Main Ingredients: Basmati rice – 1 and half cup (soaked) Onion – 2 large (sliced) Tomato – 2 medium (chopped or puréed) Ginger garlic paste – 1 tsp Green chilli – 1-2 (slit) Capsicum – ½ cup (chopped) Carrot – ½ cup (chopped) Potato – 1 cup (chopped) Paneer – 1 cup (cubed) Green peas – ½ cup Mint leaves – handful Curd – ½ cup Refined oil – 2 tbsp •Ghee – 1 tbsp Dry Masala Powders: Jeera powder – 1 tsp Dhania (coriander) powder – 2 tsp Kashmiri red chilli powder – 1 tsp Biryani masala – 1 tbsp Salt – to taste Turmeric powder – 1 tsp Whole Spices: Bay leaf – 2 Cinnamon stick – 1 small piece Shah jeera – 1 tsp Peppercorn – 5-6 Cloves – 2 Black cardamom – 1 Green cardamom – 2 Star anise – 1 mace- 1 Step 1: Prep the Rice Wash Basmati rice thoroughly. Soak it in water and keep it aside for 15–20 minutes. Step 2: Start the Base In a pressure cooker, heat refined oil and add 1 tablespoon ghee. Add your whole spices: 1 bay leaf, cinnamon stick, 1 tsp shah jeera, a few peppercorns, 2 cloves, 1 black cardamom, 2 green cardamoms, 1 star anise, a mace. Sauté for a few seconds till fragrant. Step 3: Sauté the Aromatics Add sliced onions, 1 tsp ginger garlic paste, chopped tomato or tomato puree, and green chillies. Cook everything till it turns soft and aromatic. Step 4: Add Vegetables Add chopped carrot, potato, capsicum, peas, and paneer cubes. Stir everything well for a few minutes. Step 5: Flavor Boost In a blender, add curd and fresh mint leaves. Blend it into a smooth paste. Pour this into the cooker and cook till the aroma releases. Step 6: Add Dry Masalas Now add: Jeera powder – 1 tsp Dhania (coriander) powder – 2 tsp Kashmiri red chilli powder – 1 tsp Biryani masala – 1 tbsp Salt – to taste Turmeric powder – 1 tsp Mix well. Step 7: Add Rice & Cook Drain the soaked rice and add it to the cooker. Gently mix everything. Add hot water in 1:2 ratio (1 cup rice = 2 cups water). Close the lid and cook on medium flame for 2 whistles. Step 8: Rest & Serve Let the pressure release naturally. Fluff the rice gently with a fork. Serve hot with raita or salad.
